1. Set the oven to 240 degrees C or as high as it will go

2. Put the rice in a shallow baking dish, dot the butter on top and sprinkle in the salt.

3. Pour over the boiling water, cover tightly with foil and bake in the oven for 23-25 minutes until cooked - have a peek underneath the foil to check.

Baked Rice

SERVES:

300g basmati rice 


600g boiling water 


10g butter, cut into chunks 


A pinch of salt

Serve this with my Darling Daal or Lamb Tagine

This recipe is wonderful because it can easily be scaled up or down - allow 75g rice per person. You can also play with it by adding onions, spices or nuts to add an extra dimension.
